Caprese Salad

I wanted to share with you some of my favorite lunch ideas.   I love preparing simple dishes that are very tasty and filling.  I must say that my all time favorite lunch is a Caprese Salad.  The combination of fresh tomatoes with basil and mozzarella is simply devine!  It takes approximately two minutes to put together which gives your plenty of time to sit down and enjoy this delicious meal.

Spinach Wraps

When you are looking for a delicious lunch that can be made ahead of time then Spinach Wraps may be the perfect meal for you.  These are so tasty and the crunch so satisfying.   These would also be a fun lunch idea for children.  Such a great way to switch it up from the traditional Peanut butter & Jelly sandwich.   In my YouTube video I show you how to make these wraps.  A must watch if you are interested in some new lunch inspirations.

The Smoothie

Many of us are avid lovers of smoothies.  I love smoothies because they are simple to make, very filling, and you can make endless varieties.  Plus, I love experimenting with different smoothie recipes.  Smoothies are also a great idea for breakfast.  One of my favorite smoothies is the Key Lime Raspberry Smoothie.  The taste is so creamy and delicious, and the bright red color is also very appealing.  Check out my YouTube video if you are interested in seeing how I make this smoothie.

The Soup Sampler

The soup sampler is a great lunch idea for office luncheons or if you have friends over for lunch.  You make three of your favorite soups to give your guest a fun variety to sample.  Add some warm bread and a side salad, and you have the perfect lunch that can feed many.

Fruit Salad

Many of you know my love for fruit.  I always welcome a fruit salad at my lunch table.  You can make it ahead of time, and you have so many options when creating your salad.

I hope you enjoyed my sharing some of my favorite lunch choices.  You can always find additional inspiration on my YouTube channel At Home With Nikki.  Have a wonderful day friend!

Blessings & Love

I cannot believe how fast this week is going by!  I hope that you all are having a wonderful week.  This week I wanted to share with you my shrimp and grits recipe.  As you all may know, I live in Charleston, South Carolina.  One thing that we love in Charleston is our shrimp and grits.  I have tweaked and tweaked this recipe to fit my taste buds and I am truly proud of my results.

I collaborated with another blogger and recipe video creator Julie from the blog “Cooked By Julie”.  She not only has a amazing blog where she shares tons of her recipes.  She has a youtube channel filled with video cooking tutorials.  You can find her youtube channel at: CookedByJulie.  We teamed up this week to each share a shrimp recipe.  I shared my shrimp and grits and Julie shared her shrimp remoulade.  I hope you will enjoy both videos.

So I recently tried a wonderful new and easy recipe that was shared with me from one of my viewers.  I just love this simple and easy breakfast recipes.  It is heavenly!  I made these for the first time this morning for my husband and I.  We truly loved them!  They were the perfect compliment to our morning coffee and tea.   Below are the instructions for how to prepare these quick and delicious Bacon Cinnamon Rolls.   Hope you will give it a try.
So simple!  You only need one can of Grands Cinnabon rolls (which makes a serving for 5) and a 5 slices of bacon.
STEP ONE: Unroll the cinnamon roll the length of the bacon.
STEP TWO: Lay one slice of bacon on top of the unrolled portion of the cinnamon roll.
STEP THREE: Roll the cinnamon roll back in place with the bacon.
STEP FOUR: Place on your baking pan and back at 350 degrees for 25 to 27 minutes.
Your ready to eat!  You can add the icing that comes with the cinnamon rolls after taking them out of the oven if you choose.  I liked mines without the icing, but my husband loved it with the icing. Either way it is delicious!
