My Banana Nut Bread

So today I made a comment on facebook stating:

“Hubby had to work today and I am being totally lazy.
But, in another hour or so I am going to go throw some ingredients in the
breadmaker to make a banana bread(makes the house smell so good), throw on the
christmas lights and music so when he comes home I look so like Susie Homemaker
instead of Peggy Bundy….LOL!”

Well I received some responses to please share the banana nut bread recipe that I use. So I took you on my journey of making banana bread in m breadmaker 🙂

Here is my banana nut bread…YUM!

I have a West Bend bread maker. I really like it. So easy to use and I have had great success with it. My hubby got it for me for Christmas last year. I do get good use out of it. If you want a bread maker for yourself, click here for the best buys. I usually love making sweet breads in it late at night so that it is fresh and ready for our morning coffee. Since the kitchen is not my passion, bread makers are awesome to help me along in my baking efforts :).
So this is my little recipe journal. I usually write down some of my favorite recipes in here. This is where I can find all those staple recipes that are no fail for me :).
So here are the ingredients needed:

2 Large Eggs
2/3 c. sugar
1/3 c. butter
1 1/4 tsp. baking powder
1/8 c. milk
1/2 tsp. baking soda
2 bananas (smashed)
1/2 tsp salt
1 1/3 c. bread flour
1/2 cup chopped nuts

Make sure all ingredients are room temperature.

STEP ONE: Put eggs, butter, milk and bananas in the bread maker.
In a mixing bowl combine the remaining dry ingredients. Mix well then add to bread machine.
Use the quick bread setting on your bread maker and start the machine.
Sit back and let the bread machine work its magic! Takes approximately 2 + hours.
Once bread is done. Just take a butter knife and go around the bread while in the machine. Then flip the bread onto a plate.

Grab your coffee and your ready to enjoy!

I used this recipe the other day much easier than mixing it all myself and having to watch it in the oven 🙂 lets just say I’m making another loaf today as the first didn’t last very long. I put some honey butter on mine mmmm. Thanks for sharing.

Convert recipe to a conventional oven with directions…Thanks

  8. Lyn says:

Hi Nikki, I notice you mention you make sweet bread late at night, do you leave them on a delayed setting? Also what sweetbreads do you make as I would like to try them. Hugs from Lyn in the UK xx

  9. Lyn says:

Oh dear Nikki , I wonder what went wrong. I followed your recipe only to find what looked like a brain laying in the bottom of my bread pan. i think I may have got mixed up with the cup measurements as you know we don’t really do cups in the UK. Even though my MIL bought me a beautiful ceramic set of cups fro Christmas. Never mind I will try again..

  11. Elisa says:

Someone posted your site on Facebook!
I have a question: can you use regular flour instead of bread flour?

  12. Angela says:

Just wanted to make sure, there doesn’t need to be yeast since it’s bread flour? I’m sort of a noob.
